An easy menu and recipes for a spring dinner party.

A dinner party is a great way to bring people together, and the work involved doesn’t have to be difficult. Our spring menu incorporates the best produce and flavors of the season, and the recipes are quick and easy to make. Gather a few of your favorite peeps and celebrate spring together.

Spring Salad

1 head butter lettuce, washed
Chopped chives

Dressing:
1/4 cup olive oil
1/4 cup red wine vinegar
2 garlic cloves, chopped
Juice of 1 lemon
Salt & pepper to taste

Whisk dressing ingredients together and toss with butter lettuce, chives, and citrus sections in large salad bowl. For a citrus twist, add chopped sections of orange, tangerine, or grapefruit.

Asparagus with Lemon

1 bunch of asparagus, washed
1 sliced lemon
Olive oil to taste
Salt and pepper to taste

Toss all ingredients together in a hot cast iron skillet or large frying pan. Let brown a little on one side but remove when asparagus is bright green, leaving it with a little crunch.

Spring Penne Pasta:

1 box penne pasta
2 baskets washed cherry tomatoes
2 ½ cups chopped, washed basil
Goat-cheese crumbles

Boil pasta in salt water until al dente. Place whole cherry tomatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and broil in oven for 15 minutes.  Toss cooked pasta and roasted tomatoes with chopped basil leaves and goat cheese.

Minted Strawberries:

Sliced strawberries
Chopped mint
2 tbsp. honey
1 tsp. water

Mix berries, mint, honey, and water in a bowl and let set in the fridge while you eat dinner. Layer strawberry mixture with whipped cream in individual cups just before serving.
