Holiday treats don’t have to be unhealthy — the green color scheme of these nutritious fruit skewers works perfectly with St. Patrick’s Day. A fun, clever way to get kids (and yourself) to eat something green*, these easy-to-make snacks are great for breakfast, lunch, or to serve at a party.
Makes approximately 2 dozen skewers.
St. Paddy’s Skewers
- 1 cup green grapes
- 1 cup chopped kiwi
- 1 cup chopped green apple, rubbed with a cut lemon to prevent browning
- 1/4 cup fresh mint leaves
- 24 wooden skewers
Alternate apple and kiwi pieces with whole grapes on skewers, dividing the pieces with leaves of fresh mint. Place on a tray and chill until serving.
*We used grapes, apples, and kiwis, but you can use any fruit that is green and available at your local market.
