
Roll up a sweet dessert in no time. Check out the recipe for this berry cake roll that looks impressive but isn’t hard to make, brought to you by Evite in partnership with Reddi-wip.
Ingredients:
- PAM cooking spray
- 1/2 package yellow cake mix
- 2 eggs
- 1/4 cup water
- 1/4 cup powdered sugar, sifted
- Reddi-wip
- 4 cups fresh berries (mix of blueberries and strawberries, raspberries and blackberries cut in small pieces)
Materials:
- Kitchen towel
- Wax paper
- Jelly roll pan, 10 1/2″ x 15 1/2″ x 1″
- Electric mixer
- Bowl
- Spoon
Step 1: Preheat oven to 350 degrees. Spray PAM onto jelly roll pan. Line pan with wax paper and spray again.
Step 2: Beat cake mix, eggs and water in a large bowl with an electric mixer for 30 seconds on low speed. Then beat on medium speed for 2 minutes. Set aside.
Step 3: Sprinkle powdered sugar onto clean kitchen towel. Set aside.
Step 4: Pour the batter onto the wax paper in the pan. Then bake cake according to box directions, being careful not to overbake. To check if the cake is done, insert a toothpick into the center of the cake. The toothpick should come out clean when cake is ready.
Step 5: Immediately after taking the cake out of the oven, hold opposite sides of the wax paper, lift up the cake out of the pan and flip onto the powdered sugar towel. Slowly peel off the wax paper. Then start rolling the towel and cake together.
Step 6: Let cake completely cool on wire rack.
Step 7: Unroll the cake when cooled and add Reddi-wip. This will be the cake roll filling.
Step 8: Mix the berries together then spread them onto the flat cake. Re-roll the cake without the towel.
Step 9: Top your cake with powdered sugar, Reddi-wip and berries. Serve immediately and enjoy!
