Try this trendy new take on a Thanksgiving staple with these easy oven-baked black pepper sweet potato fries.
- 3 large sweet potatoes
- 1/4 cup olive oil
- 2 teaspoons black pepper
- Salt to taste
Preheat the oven to 450 degrees.
Peel the sweet potatoes and cut in half crosswise.
Stand the sweet potato up on the cut end and cut into planks about 1/2-inch wide. Lay the planks on your cutting board and cut them into strips so the shape resembles French fries. Repeat with remaining sweet potatoes.
Place the cut sweet potatoes in a bowl and toss with olive oil and pepper.
Spread the sweet potatoes out on two baking sheets –- do not crowd them. (It’s better to cook in two batches if you only have one baking sheet.)
Place the baking sheets in the oven and roast for 15 minutes.
Remove the trays from the oven and use a spatula to toss the fries and turn over as many as you can.
Return the trays to the oven and bake for an additional 10 minutes or until desired level of crispiness is achieved.
Toss with salt as soon as the fries come out of the oven.
