- 1/4 Cup of Mayo
- 1/4 Cup of Mexican Crema
- 1/4 Cup of Crumbled Cotija Cheese
- 1 Tbsp. of Ancho Chile Sauce
- 1/4 Cup of Finely Chopped Cilantro
- 4 Ears of Shucked Corn
- 1 Lime, Cut in Half
Mix the mayo, mexican crema, cotija cheese and ancho chile sauce in a bowl.
Squeeze half a lime in the bowl and mix again.
Shuck corn and then grill.
Using a spoon or knife, cover the grilled corn in the mixture.
Roll corn (or top) with more crumbled contija cheese and cilantro.
Squeeze the other half of the lime on top.
Add chili powder if desired.
