Ingredients

  • 3 ripe mangoes, peeled and diced (about 3 cups)
  • 2 small tomatoes, diced (about 1 cup)
  • 1/2 small serrano pepper, minced (about 1-2 teaspoons or to taste)
  • 1/4 cup fresh cilantro, roughly chopped
  • 1/4 cup red onion, diced
  • 2 limes juiced (about 2 tablespoons of juice)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

    In a medium bowl, combine all of the ingredients and chill.
