Ingredients

For the green velvet batter:

  • 2 1/2 cups all purpose flour
  • 2 cups sugar
  • 1 tablespoon cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 cup oil
  • 1 cup buttermilk
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla extract
  • 2 tablespoons cream cheese
  • 1 ounce green food coloring

For the chocolate cream cheese frosting:

  • 1 8-ounce package cream cheese, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 3 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

    Preheat your oven to 350 degrees. Make sure to grease and flour your cupcake or cake pans thoroughly.

    Lightly whisk eggs in a medium bowl. Add remaining liquid ingredients, except the green food coloring (oil, buttermilk, vinegar, vanilla extract and cream cheese). Whisk until well blended, then set aside.

    Next, fold in the dry ingredients (flour, sugar, cocoa powder and baking soda) and stir together well.

    Combine your liquid and dry ingredients with all of the green food coloring with a mixer on medium to high speed for about 2 minutes, or until it is completely mixed and the green coloring is well combined.

    Baking times can vary based on the type of pan used. For standard cupcakes, bake for about 15 minutes. For one 8-inch cake pan, bake for about 22 minutes. For mini cupcakes, bake for about 13 minutes. For one whoopie pie pan, bake for about 12 minutes.

    While the green velvet cupcakes are cooling, make the chocolate cream cheese frosting. Using an electric mixer, beat together cream cheese and butter on medium/high speed until the mixture is creamy.

    Sift powdered sugar and cocoa powder into the mixture — sifting helps to prevent lumps. Add salt and mix on low speed until smooth.

    Add 1 teaspoon vanilla extract and beat on medium/high until smooth.
