Try this fresh take on beer-can chicken, brought to you by Evite in partnership with Strongbow Honey Hard Apple Cider — cook the bird over a can of hard cider instead of beer. The crisp apple flavor makes this a fall favorite.

Strongbow Hard-Cider Chicken by Evite

For the dry rub:

  • 1/4 cup brown sugar
  • 1 tablespoon coarse salt
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cinnamon

For the chicken:

    Combine all the ingredients for the dry rub.

    Drizzle the olive oil over the chicken and rub the dry rub into the chicken to coat. Set aside to marinate for as long as you can (overnight if you have time).

    Remove the second rack from your oven and adjust the remaining rack to the lowest level.

    Preheat the oven to 425 degrees.

    For easier cleanup, line your roasting pan with aluminum foil.

    Open the can of hard cider and drink or discard about 1/3 of the liquid. Place the can in the center of your roasting pan. Using your hands, hold open the cavity of the chicken and place the chicken on top of the can.

    Being careful not to let the chicken tip over, place the roasting pan in the preheated oven and roast for 20 minutes.

    Rotate the pan, reduce the heat to 350 degrees and continue roasting for 40 to 45 minutes until a thermometer inserted in the thigh of the chicken registers 165 degrees.

    Remove the chicken from the oven and let sit for 10 minutes.

    Place the chicken on a bed of herbs (rosemary and/or bay leaves look modern) and present to the table before bringing the chicken back into the kitchen to carve. Be sure to slice the breast meat the way you would a turkey so that most of your guests can try both white and dark meat.
