I scream, you scream, we all scream for ice cream (cupcakes)! Get this tasty treat’s recipe below, brought to you by Evite in partnership with Reddi-wip.
- Cake mix (plus ingredients listed on box)
- Ice cream
- Toppings of your choice (we used crushed chocolate sandwich cookies, but you could also use sprinkles or leave plain)
- Mixing bowl
- Muffin baking pan
- Ice cream scoop
Step 1: Bake cupcakes. After they have cooled, use a knife to carve out the center of each cupcake.
Step 2: Cut the bottom off the cupcake top so it’s flat.
Step 3: Scoop ice cream into the hollowed-out cupcake. Be sure to leave enough room to put the cupcake top back on.
Step 4: Place the cupcake tops on and “frost” with Reddi-wip, then sprinkle with toppings. (To prepare the crushed cookie topping shown here, place the cookies — one cookie for every two cupcakes — into a resealable plastic bag left open slightly so air can escape. Lay the bag on the counter, cover with a towel and use a spoon or fork to crush the cookies.)
We recommend serving this tasty treat right away. However, if you prefer to save it for later, simply freeze and allow to thaw for 10 minutes before serving.
