For the Burger:
- DOLE® Canned Pineapple Slices
- 3/4 cup reduced sodium teriyaki sauce
- 1 1/2 pounds lean ground beef
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 large yellow onion, sliced
- 4 slices Swiss cheese
- 4 brioche buns
- 4 green leaf lettuce leaves
For The Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons reduced sodium teriyaki sauce
- 1 tablespoon honey
- couple dashes hot sauce
Drain the DOLE® Canned Pineapple Slices pineapple juice into a bowl. Place the DOLE® Canned Pineapple Slices into a shallow baking dish, and set aside. Whisk the teriyaki sauce into the DOLE® Canned Pineapple Slices pineapple juice. Pour about 3 tablespoons of this sauce over the DOLE® Canned Pineapple Slices. Set aside.
In a large bowl, gently mix together the ground beef, black pepper, garlic powder and onion powder. Divide into 4 equal pieces and then shape each one into a burger patty about ½-inch thick. Place into a shallow baking dish. Pour the remaining pineapple teriyaki sauce over the burgers and allow to marinate for 20 minutes, turning over halfway.
Meanwhile, to make the sauce for the burgers, in a medium bowl, whisk together the mayo, teriyaki sauce, honey and hot sauce until smooth. Cover with plastic wrap and place in the fridge until ready to use. Sauce can be made up to 3 days in advance.
Set a large grill pan over medium high heat. Once hot, spray the pan with nonstick cooking spray and add the onion slices in a single layer. Cook for about 2 to 4 minutes on the first side, or until charred, then flip over and continue to cook for another 2 to 3 minutes on the second side. Transfer to a plate and set aside.
Grill the burgers for 6 to 9 minutes per side, or until a thermometer reads 160 degrees F and juices run clear. Place a slice of cheese on top of each and cook until just starting to melt. Transfer to a plate or platter and set aside.
Drain the DOLE® Canned Pineapple Slices from the marinade and grill on each side for about 1 to 2 minutes, or just until slightly charred.
To assemble, split the buns and toast on the grill. Spread each half with the sweet and spicy teriyaki mayo. Top each bottom half with lettuce, grilled onions, a burger patty, and a grilled DOLE® Canned Pineapple Slice. Cover with top bun and serve.
