- 1 small sweet red pepper
Wash red peppers and dry.
Place the peppers over an open flame, straight onto the grill of your stovetop. You can also place peppers onto the grill of a barbeque. Allow peppers to sit over the open flame until they are blackened and appear to be burning.
Turn and roast all sides, then place the peppers into a Ziploc bag or a bowl covered with plastic wrap. Allow the peppers to steam for 10-15 minutes.
Over the sink (this is messy) remove the stem and seeds (discard) and with your fingers rub and peel the skin from the flesh. Don’t worry if you have some black flecks remaining, just remove most of the skin.
