Sip on the splendid mix between a pina colada and a frozen margarita by Sandra Lee. This coconut margarita is the perfect refreshing drink to serve at a beach soiree, like Sandra Lee’s “Life’s A Beach” party.
Makes 4 drinks
- 1/2 cup coconut water
- 1/2 cup sugar
- 1 tablespoon lime juice
- Shredded coconut
- 2 cups coconut milk
- 1/2 cup Captain Morgan Parrot Bay Coconut rum
- 1/4 cup Don Julio Blanco tequila
- 1/4 cup coconut syrup plus extra for rimming the glasses
- 3 cups ice
Heat coconut water and sugar until sugar is dissolved; remove from heat. Add lime juice.
Dip rims of glasses in coconut syrup, then shredded coconut.
In a blender, combine coconut milk, rum, tequila, coconut syrup, and ice. Blend. Pour into glasses.
