These scrumptious lemon ricotta pancakes by Sandra Lee make a sublime addition to a hosted breakfast or brunch like her “A Little Bit of Country” party.



  • 1 cup ricotta cheese
  • 4 eggs, yolks and whites separated
  • 4 tablespoons melted butter
  • 1⁄2 cup baking mix
  • 2 tablespoons sugar
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon extract
  • 1⁄2 teaspoon nutmeg
  • Sour cream
  • Strawberry jam
  • Powdered sugar

    Beat together ricotta, egg yolks, melted butter, baking mix, sugar, lemon juice, lemon extract, and nutmeg.

    Beat egg whites with clean beaters until stiff but not dry. Fold into ricotta mixture.

    Cook pancakes on a hot griddle. Sprinkle with powdered sugar and top with dollops of sour cream and strawberry jam.
