    Preheat oven to 400°.

    Line a muffin tin with cupcake liners.

    In a large bowl, beat together eggs and brown sugar.

    Add melted butter and keep mixing until smooth.

    Add vanilla extract and applesauce.

    Add flour, baking soda, baking powder, salt, and and spices. Combine until all ingredients are incorporated and there are no large lumps.

    Disperse batter evenly into muffin tin, filling each muffin about halfway full.

    Set tin aside.

    Peel and dice apples.

    In a large bowl combine diced apples, brown sugar, spices, flour, and lemon juice.

    Mix until well combined.

    Place a few pieces of diced apples into center of each muffin.

    Combine oats, brown sugar, and melted butter in a bowl.

    Generously sprinkle on top of each muffin.

    Bake 18-20 minutes until they’ve puffed up!

    Let cool.

    Top with your favorite icing or cinnamon sugar.
